Chef Tange brings decades of experience in traditional Edomae sushi, honed through years of apprenticeship and practice in both Japan and the U.S. Known for his meticulous knife work and quiet intensity, he believes that the best sushi is made with humility, patience, and purpose.

CHEF RANNO

Chef Ranno, trained in both classical Japanese cuisine and modern culinary techniques, offers a complementary perspective-balancing creativity with discipline. His approach celebrates the subtleties of each ingredient, letting flavors unfold naturally across every course.
